We are currently looking for a professional and dedicated Assistant Kitchen Manager to join our team in White River.

Job Overview

As the Assistant Kitchen Manager, you will support the daily operations of the kitchen, leading a team to deliver high-quality meals while maintaining strict safety and financial standards. We are looking for a leader who is passionate about culinary excellence and efficient kitchen management.

Key Responsibilities

Staff Leadership

  • Supervise and mentor kitchen staff, including chefs, cooks, and assistants.
  • Organize staff shifts and delegate tasks to ensure the kitchen runs smoothly.
  • Conduct performance reviews and provide regular feedback to the team.
  • Help implement training programs for culinary skills and safety protocols.
  • Promote a positive, collaborative, and high-energy work environment.

Operations & Quality Control

  • Ensure all food is prepared and presented according to company standards.
  • Monitor kitchen workflow to improve efficiency during busy service periods.
  • Follow standard operating procedures (SOPs) to maintain brand consistency.
  • Oversee food preparation to ensure every dish meets quality expectations.

Inventory & Financial Management

  • Manage stock levels and order supplies as needed.
  • Monitor food costs and implement ways to reduce waste.
  • Work within the kitchen budget and track key performance expenses.
  • Negotiate with suppliers to get the best quality ingredients at the right price.

Sanitation & Safety

  • Maintain high standards of hygiene and cleanliness throughout the kitchen.
  • Ensure compliance with all health and safety regulations, including HACCP.
  • Conduct regular inspections and keep detailed records of food storage and temperatures.
  • Manage equipment maintenance and cleaning schedules.

Menu & Innovation

  • Assist in developing new recipes and keeping up with food trends.
  • Ensure all menu items are cost-effective and meet guest preferences.
  • Help manage catering for special events and hotel promotions.

Requirements

  • Qualification: Matric certificate.
  • Experience: At least 5 years of experience in a Kitchen Manager or similar leadership role.
  • Skills: Strong knowledge of food safety, excellent leadership abilities, and culinary expertise.
  • Performance: Ability to stay calm and organized in a fast-paced environment.
  • Financial Literacy: Understanding of cost control and inventory management systems.
  • Physical Stamina: Ability to handle the physical demands of a busy kitchen.
